Ingredients:

 4 Free Range Eggs (Brown or White your Choice)

Salt and freshly ground Black Pepper

Italian Mixed Herbs (or Seasoning of your Choice)

2 cups Baby Spinach

4 Tbsp of Crumbled Feta Cheese.

1 ½ / 2oz of water for steaming.

 STEP 1.

In a bowl or jug, beat together the 4 free range eggs lightly with salt, pepper and Italian herbs.

Set aside and prepared other ingredients.

STEP 2.

Heat up your Steam Plus Pan over medium heat. Add an equal amount of freshly washed spinach (this will give the Spinach enough moisture to sweat in) to each individual cup in the pan. When the spinach starts to wilt, add 1 tbsp of feta cheese to each cup, spreading it on top of the spinach.

 STEP 3.

Pour equally amounts of the eggs mixture into each of the 4 cups. Once eggs start to cook, move the edges in with a small spatula.

 STEP 4.

Pour 1½ / 2oz of water into the water reservoir (the middle channel). Place lid securely and cook for 1 or 2 minutes, (or as you like your Omelets). They will be thick, light and fluffy.

Serve immediately.
